Spicy Chicken Sesame Salad

Good evening to all readers.  Thank you for joining me again on this inviting exhibition of greens, I'm a big fan of salads and discovered my love for soy sauce after a stir fry dinner I hosted recently.  This Spicy Chicken hosts a flavorful spice that will surely bring a smile to your face.  With spinach, cucumbers, and crackers to dress up the salad, I endeavored a new sauce right from the Gluten-free isle inspired from The Canary Files blogger, Jonathan Itchon.  Thank you Jonathan for opening my eyes to Gluten-free I look forward to furthering my investment.  Before we get started in the kitchen, I would like to begin with a simple and quiet meditation.  First, open your eyes, preferably looking forward, with your hands on your lap, back straight, feet flat on the floor, (if you desire to sit or lay make sure your feet are stretched out, spread apart).  Begin with a sustained long breath, inhale and exhale, when you exhale immediately respond with another inward breath, in, then out.  Next, bring both hands on the stomach, bringing attention inward as you discover new sensations, breath in, then out, two more times and during this moment feel the energy in hands as they feel the expansion from your stomach.  Began converting your focus from mind activity to breathing, letting go of any attachments to thoughts about what you are doing, what you will be doing, current dilemmas, future, past, any thoughts about who you are, and focus on this moment.  Feed your body with a flow of love with every breath you take.  Before entering the kitchen remember to focus on your body, any new sensations that you may experience, become aware of it and realize that what you are doing at this moment is more important than the cause of any subtle feelings.  As you are working, move with blissful motions, stay relaxed, and remember to always love.

Spicy Chicken Sesame Salad

  • 2 tbsp Soy Sauce
  • 1 tbsp basil
  • 1 teaspoon rosemary
  • Half of a jalapeno
  • 1 tablespoon sesame oil
  • cucumbers
  • Premium whole grain crackers (if desired, use 2)
  • 1 1/2 cup spinach
  • 1/4 cup romaine
1) Heat medium skillet on stove, medium heat and take out ingredients.

2) In a bag, or desired seasoning source, combine chicken with soy sauce, basil, rosemary and jalapeno (for a spicier taste add seeds)

3) Add sesame oil to skillet and pour chicken with seasonings on top of oil.  Cook both sides for 5 minutes each, and with tongs or spatula begin pulling apart chicken to smaller pieces.
4) While the chicken is cooking, begin the base of your salad with spinach, romaine, cucumbers, and crackers.
5) Once chicken is ready, add to salad, top with dressing (I used Sesame Ginger" dressing, you can find it in the Gluten-free isle at your local grocery store) and add sesame seeds to dress up.
